Through late 2019 and early 2020, I developed some IBD type symptoms that continued to build. After going down the traditional medical route, I was diagnosed with a few allergies that never existed before and also a weird form of Lymphocytic Gastritis. I turned to food to help me get better. I struggled through the middle of 2020 on a 'low carb' diet that was designed to clean up my gut but in reality made me sicker and sicker.
