Welcome back to my cozy kitchen 🤍 Today I’m cooking stuffed spinach shells from a thrifted cookbook, bringing an old recipe back to life with simple ingredients and lots of comfort. Thrifting cookbooks and cooking from the past is one of my favorite ways to slow down and enjoy home cooking. If you love vintage finds, nostalgic recipes, and cozy vibes, don’t forget to subscribe ✨ INGREDIENTS: 2tbsp salad oil 1sm onion diced 1 (28oz) can tomatoes 1 (6oz) can tomato paste 2tsp brown sugar 1tsp oregano leaves 1 (12oz) shells 2 (9-10oz) frozen spinach 1 container Ricotta cheese 18oz shredded Mozz cheese salt and peppper In a 3qt saucepan over medium heat, cook onion in hot oil till tender (stirring often). Add tomatoes and the liquid, tomato paste, brown sugar oregano, 1/2tsp salt and pepper stirring to break up the tomatoes. Heat on high to boiling. Reduce to low. Cover and simmer for 20m to blend the flavors. Prepare spinach as label directs. Pour into large bowl and cool. Stir in Ricotta, Mozzarella cheeses, 1tsp salt and 1/4tsp pepper. Meanwhile, prepare the mac shells as label directs. Drain. Fill each cooked shell with 1-2tbsp of the cheese/spinach mixture. Preheat oven to 350degrees, spoon sauce evenly into roasting pan. Arrange the shells in sauce. Cover pan with foil and bake for 30m until hot and bubbly.
