📍Louisiana, USA 🇺🇸 We rolled into Scott, Louisiana, the Boudin Capital of the World, without a clue what to order. Locals sent us to Billy’s Boudin and Cracklins, where the staff took twenty bucks and loaded us up with the classics: boudin balls, pepper jack-stuffed bites, smoky links, and still-crackling pork skin fresh from the fryer. We ate it off the hood of the car, grease on our fingers, spice on our lips, and flavors that felt like a punch and a hug at the same time. From there, Louisiana kept opening its doors. Grilled gator in Scott. Homemade beignets pressed into our hands in Lafayette. Ten-foot gators drifting through the bayou like they owned the place. And Raceland, where a Cajun barlady, with the bayou behind her, shared her gourmet jerky while answering every question I could throw at her.
