How Caviar Kaspia and Glace brings Viral Eats to NYC | New York Next

“We created a hot drinks menu, and the main item was the s’mores hot chocolate. We were very lucky that the right people came in, like Rachel [Brotman], and kinda put it on the map. And from there it was just kind of a snowball effect,” says Glace’s Founder Sasha Zabar. Rachel Brotman gushes about Glace’s viral s’mores hot chocolate saying, “It’s such an iconic design this hot chocolate, you’ve never seen one like it. The way that they pipe the marshmallow on the rim, torch it and the whipped cream goes on. You can stick a straw into it. I think for decades to come it’ll be an icon.” Similarly, The Mark’s General Manager Etienne Haro sat down with The Post, and Rachel to talk about how Caviar Kaspia is serving an impeccably made caviar bagel at the perfect price point. Etienne says it’s not all about going viral, but about creating something Caviar Kaspia can proudly sell to customers. “We had a lot of requests, and found it was a way to improve on it [the bagel], and to keep working on what looks very simple, to keep working on the right balance, and the right bagel,” says Etienne about the hotel’s caviar bagel. Glace’s new location is open in the Upper East Side, and they have a year round food truck located in Rockefeller center. Caviar Kaspia’s caviar bagel is $35 per person. Bagels must be ordered in advance, and are available for pickup between 9AM-12PM on Saturdays and Sundays only.
