Swamp Potatoes and Sausage 1 1/2 pounds gold potatoes, cut into 1 1/2 inch pieces 1/2 small onion, chopped 2 garlic cloves, minced 3/4 tablespoon olive oil 1/2 teaspoon kosher salt 1/4 teaspoon black pepper 3/4 teaspoon Cajun seasoning or your favorite seasoning, optional 1/2 pound smoked sausage, sliced 1/2 pound fresh green beans, cut into 2 inch pieces 1/2 packet onion soup mix 1/4 teaspoon garlic powder 1/4 cup butter (4 tablespoons) Add potatoes and chopped onion to the bottom of a slow cooker. Drizzle with olive oil, salt, pepper, and Cajun seasoning (if using). Toss to coat evenly. Layer the sliced smoked sausage and green beans on top. Sprinkle with onion soup mix and garlic powder. Place pieces of butter evenly over the top. Cover and cook on until potatoes are tender and everything is well flavored 2-3 hours high, 3-4 hours on low.
