▶ Recipe Ingredients ~ • 15 nos Dried Red Chiles (use any type of chile, depending on your heat level preference) • 08-10 Asian Red Shallots (small heads, halved) • 08-10 cloves Garlic (halved) • 3 tbsp Dried Shrimp (small) • 3 tbsp Palm Sugar (grated) • 1 tbsp Fish Sauce • 2-3 tbsp Tamarind Paste • 1 tsp Salt • 1 tsp Dark Soy Sauce (optional, but recommended) • ½ cup Vegetable Oil (divided) Directions ~ • Slit the dried red chiles using a pair of scissors and remove the seeds and membranes • Add the slit-dried red chiles to a preheated pan and dry toast over low heat until smoky. Set aside. • In the same pan add the halved shallots and garlic • Let them toast for 2-3 minutes over low heat until slightly charred. Set aside. • Grind the toasted dried red chiles to a fine powder. • To the ground chiles, add the toasted shallots, garlic, dried shrimp, palm sugar, fish sauce, tamarind paste, salt, dark soy sauce, and ¼ cup of vegetable oil. • Give a good mix to incorporate everything before grinding. • Grind to a fine paste • In a preheated pan (medium-low heat), add the other ¼ cup of vegetable oil. • Once the oil is heated, add the prepared chili paste mixture • Mix and cook over low heat for 3-4 minutes. • Transfer to a serving dish and enjoy!
