Hello, friends! Slow down with me in today’s cozy vlog—trying on handmade gingham homewear from our atelier, adding warmth to the kitchen, and cooking a tender, juicy salmon dinner. Plus, a sweet surprise from a dear friend that made my day. Pour yourself something warm and come escape for a little while 🍴🪻🌷🌸 🐟 Creamy Salmon on a Spinach Pillow with Mashed Potatoes 🍽️ A simple, comforting dinner idea that feels a little special. Ingredients: Salmon fillets (skin removed) 1/2 onion, finely chopped A generous handful of fresh spinach 1/2 cup half-and-half (or to taste) Salt, pepper, coriander Mashed potatoes (prepared separately) Instructions: 🥣 In a French oven, sauté the chopped onion in a bit of oil (I used avocado oil). Add the spinach and pour in the half-and-half. Let it simmer for a couple of minutes until the spinach wilts. Place the salmon fillet on top of the spinach mixture. Season with salt and a touch of coriander. Cover the French oven with a lid and let it gently cook on low heat for about 15 minutes. Meanwhile, prepare your mashed potatoes. Serve the salmon over the creamy spinach with a side of mash.
