I've played the game three times (not all the way through) but only just found these doors, which might come in handy if you are trying to escape the guards in a hurry. The first one also has terrific views. How easy it is to get through them depends on the time of day or night. They may require a good lockpicking skill if you don't have the keys. Keys are available from pickpocketing guards or from Hans Capon (steal his clothes while he is in the baths). As far as I know the wine cellar is the only one required for a mission but I think the lower castle gets attacked through the second door.
