Learn how to make authentic Sri Lankan Bitter Gourd Curry (Karawila curry) with simple ingredients. This traditional spicy and slightly tangy dish is perfect with rice and curry. Follow this easy step-by-step recipe for a delicious homemade Sri Lankan meal. 🛒 Ingredients • 4 Bitter gourd (Karawila) • 1 teaspoon curry powder • 1 teaspoon chili powder • 1 teaspoon turmeric powder • 1 small piece cinnamon • 1 teaspoon salt (adjust to taste) • 2 pieces goraka (Garcinia / Goraka) • Small piece tamarind • 1 onion (sliced) • 3 cloves garlic • Few curry leaves • 1 green chili (sliced) • 1 tomato (sliced) • 1 cup coconut cream and few fenugreek seeds First, cut the bitter gourd into small thin slices. Wash it well and keep it ready. Next, add the sliced bitter gourd into a pan. Add a little water, turmeric powder, salt, and two pieces of goraka. Mix everything together. Now cover the pan and steam it for a few minutes until the bitter gourd becomes slightly soft. This helps reduce the bitterness and adds nice sour flavor from the goraka. “Once it is steamed, remove any excess water.” “After that, add coconut milk to the pan.” Now add all the other ingredients — curry powder, chili powder, cinnamon, sliced onion, chopped garlic, curry leaves, green chili, and tomato, fenugreek seeds. Mix everything well and cook on medium heat. Let it simmer until the bitter gourd is fully cooked and the curry becomes thick and flavorful. Once it is nicely cooked and the oil starts to separate slightly, turn off the heat. And that’s it — our delicious Sri Lankan style Bitter Gourd Curry is ready to serve! Serve hot with rice and enjoy!
