You can easily make them in no time – we make our own vegetable broth, but if you are preparing this meal after a busy day of work and don’t have time, use store bought vegetable broth. If you decide to make your own – chop in large pieces 1 onion, 1 carrot and 1 celery stick. Boil them in a pot with 4 cups of water for about 20 minutes, till they transfer all of their flavors into the water. Remove all the vegetables once ready. To make the meatballs - chop the ¼ onion into small cubes. In a large mixing bowl mix the ground pork, onion and the rice. Add 1 egg to the mixture - it will hold it together. Flavor it with salt, pepper, savory and thyme and mix very well. Shape the meatballs to the desired size. Dip all the meatballs in the vegetable stock and cook for about 30 minutes. In the meantime, prepare the white sauce. In a medium size mixing bowl beat the eggs. Add the yogurt, mix some more and slowly add the flour. Flavor with salt and pepper. Take the meatballs out of the broth into a plate. We’ll use the broth to finish our sauce. It is very important with a ladle to gradually add the hot broth to the white sauce mixture and not the other way around! Once the temperature is evened, we can pour the sauce back to the sauce pan and add the meatballs so they cook together for couple more minutes. Sprinkle the chopped parsley on top and enjoy them!
