Rui/ rohu fish pieces (2 pieces) 2. Turmeric powder (1/2 tbsp) 3. salt (1/2 tbsp) 4. Cooking oil (4-5 tbsp) 5. Onion. (2 big sized) 6. Sugar (1 tsp) 7. Bay leaves (3) 8. Dry red chilies (3) 9. Cloves (5-6) 10. Cinnamon sticks (3-4 small pieces) 11. Star anise (1) 12. Mace flower (1) 13. Green cardamom (3-4) 14. Ginger-garlic paste (2 tbsp) 15. Coriander powder (1 tbsp) 16. Cumin powder (1/2 tbsp) 17. Kashmiri red chili powder (1 tbsp) 18. Tomato sauce (1-2 tbsp) 19. Fresh curd (2 tbsp) 20. Raisins (1 tbsp) 21. Casew nuts (1 tbsp) 22. Ghee (2 tbsp) 23. Garam Masala (1 tsp) 24. Hot water (500-600 ml) Process *Clean rui fish pieces, mix with 1 tbsp of salt, 1/2 tsp of turmeric powder, and 2 tbsp of oil. Fry rui fish pieces for 3 minutes at medium flame (1.5 minutes each side). Take them out. *Fry one big sized chopped onion till this become golden brown in color. Add a bit of sugar for the caramelization. Take them out. *Now, in the same cooking oil, add 3-4 pieces of bay leaves, 3-4 pieces of dry red chili powder, 5-6 cloves, 3-4 small sticks of cinnamon, 1 star anise, 1 small piece of mace flower, 3-4 green cardamom, and fry this for 6-7 seconds. Add 7-8 tbsp of onion paste, fry this for 3 minutes at medium flame. Add 1/2 tsp of sugar for the caramelization. Add 2 tbsp of ginger-garlic paste. Again, fry this for 2 minutes at medium flame. *Now add, 1.5 tbsp of coriander powder, 1/2 tbsp of cumin powder, 1.5 tbsp of Kashmiri red chili powder, 1/2 tbsp of turmeric powder. Mix them well. Add 1 tbsp of tomato sauce and again mix. Add 150 ml of hot water and mix again. Add 2 tbsp of fresh curd. Mix this well at low flame. Add 1/2 tbsp of salt or as per the taste. Now add, 1/2 tbsp of each raisin and crushed cashew nuts. Add 2 tbsp of ghee. Mix all of them together. Add 500-600 ml of hot water. Now add, 1 tsp of garam masala. Finally, add fried fish pieces. Add most of the fried onions. Now, cover the cooking pot and cook for 10-15 minutes at medium flame. Its now ready to serve. Serve with plain hot long grain rice.
