⬇️⬇️English recipe follows⬇️⬇️ 馬來西亞老鼠粉 材料: 銀針粉1斤 免治豬肉1斤 梅菜醬2湯匙 冬菇3隻(已預先洗乾淨、浸軟、去椗及切粒及保留水分) 雞蛋1隻 乾蔥頭1個 蒜頭3粒 薑1小舊 蔥適量 芫荽適量 辣椒仔1隻 處理: 1. 銀針粉,放筲箕內,清水沖洗乾淨,擎乾水。 2. 雞蛋,打在碗內。 3. 冬菇、乾蔥頭、薑及蒜頭,切碎。 4. 芫荽,切出根部,清水洗乾淨。 5. 蔥白,洗乾淨。 6. 所有配料,放攪拌機內,攪碎。 7. 蔥及芫荽尾部,切碎。 8. 辣椒仔,切碎。 烹調: 1. 大火在鑊內燒熱油1湯匙。 2. 放豬肉落鑊,煎香。 3. 所有已切碎的配料放鑊中心,加入油半湯匙,煎香,炒勻,轉慢火。 4. 加入調味料: a. 蠔油半湯匙 b. 糖1茶匙 c. 胡椒粉適量 d. 老抽1湯匙 加入梅菜,轉大火,炒勻。 5. 加入銀針粉,炒勻,加入: a. 清水150毫升 b. 老抽半湯匙 c. 生抽半湯匙 炒勻。 6. 另一邊,預備煲仔,開大火,加入: a. 冬菇水 b. 蔥粒適量 冚蓋,大火煮滾。 7. 加入1湯匙的麻油在銀針粉內,炒勻。 8. 冬菇水已滾起,開大火,銀針粉倒入煲仔內。 9. 灑上蔥粒。 10. 在老鼠粉上,打一隻雞蛋。 11. 灑上辣椒粒。 12. 完成,可享用。 Silver pin noodle in Malaysian style Ingredients: Silver pin noodle 1 catty Minced pork meat 1 catty Preserved vegetables sauce 2 tbsp Mushrooms 3 Nos. (Have been rinsed, softly soaked, anchors removed, diced in cubes and retain its syrup) Egg 1 No. Shallot 1 No. Garlics 3 Nos. Ginger (small) 1 No. Green onion appropriate amount Coriander appropriate amount Chili 1 No. Preparation: 1. The noodle, put in a drainer. Rinse thoroughly. Drain. 2. Break the egg in a bowl. 3. The mushrooms, shallots, ginger and garlics, blend well. 4. The coriander, cut the root. Rinse thoroughly. 5. Stem of green onion, rinse with tap water. 6. All the ingredients, put in a blender. Blend well. 7. Green onion and coriander ends, chop well. 8. Chili, chop well. Steps: 1. Heat up 1 tbsp of oil at high flame in wok. 2. Put pork in the wok, fry well. 3. All the blended ingredients, put at the centre of the wok, add in 0.5 tbsp of oil. Fry well. Turn to low flame. 4. Add seasoning: a. Oyster sauce 0.5 tbsp b. Sugar 1 tsp c. Pepper appropriate amount d. Dark soya sauce 1 tbsp Add in preserved vegetables sauce, turn to high flame. Fry well. 5. Add in silver pin noodles, fry well. Add seasoning: a. Water 150ml b. Dark soya sauce 0.5 tbsp c. Light soya sauce 0.5 tbsp Fry well. 6. On the other side, get ready for a claypot. Turn to high flame. Add in: a. Mushrooms syrup b. Green onion cubes appropriate amount Cover up the wok. Heat up at high flame. 7. Add in 1 tbsp of sesame oil into the noodles. Fry well. 8. Mushrooms syrup has been boiled up, turn to high flame, pour the silver pin noodles into the claypot. 9. Put green onion cubes on top. 10. Break an egg on top of the noodles. 11.
