Place the dates in a food processor and process for a few seconds until your dates are mashed. Then, add the peanut butter, peanuts, vanilla extract, agave and process until a dough ball forms. Finally, STIR in your chocolate chips. I made a mistake in the video and added my chocolate chips into the food process and as a result it melted the chocolate chips and turned the dough into a chocolate color! It still tasted AMAZING, but if you want your chocolate chips to be noticeable and your dough to have the color of cookie dough then just stir the chocolate chips in. Remove from the processor and roll and press down into cookies or roll out your dough between parchment paper and use a cookie cutter to cut out each cookie. If you have time place the cookies in the freezer and wait an hour so that your cookies will be easier to handle. If you don't have time for that don't worry about it, you can put the cookie cream filling on the cookies right away. So lets make the filling! How to make the chocolate cream filling: In a bowl add the coconut butter, cacao powder and agave nectar. mix with a spoon and then add the 3 tbsp of vegan milk. mix until you get a creamy consistency. Don't put the bowl in the fridge cause your cookie filling will harden up! Immediately take your cookies and place the chocolate filling on one cookie and put another cookie on top. place in the freezer for a couple hours until firm. I eat these right out of the freezer or if you wan them soft you can wait for them to go to room temperature. Out of the freezer is better! Soooooooooo delicious!!! Enjoy friends!
