It’s his go-to easy camping recipe when he’s out in the wilderness, packed with meat, veggies, and plenty of protein – which equals more energy for all your outdoor adventures. INGREDIENTS 6 eggs, beaten ½ cup chopped onion ½ cup chopped peppers 1 cup diced potatoes ½ cup chopped bacon, sausage, or ground beef (optional) ½ cup shredded or cubed cheddar cheese Salt and pepper to taste INSTRUCTIONS 1. At home, crack six eggs into a mason jar and seal tightly. 2. When you’re ready to start cooking, add your choice of meat to a cast-iron skillet and brown over medium heat (optional). 3. Add the vegetables and cook until potatoes are fork tender. 4. Reduce heat to low. Add eggs and shredded cheese, and mix together being sure to combine, not scramble. Salt and pepper to taste. 5. Cover with foil and cook for about 15 minutes, or until the eggs are set in the center of the skillet. 6. Serve with salsa, sour cream, and hot sauce.
