Elotes (Mexican Street Corn) - SO good and simple to make! 🌽 Ingredients: 6 ears of fresh corn on the cob, husked and silks removed 3/4 cup of finely grated Cotija Cheese (grate a bit extra for later 1/2 cup of Mayo 2 TBSP of Mexican Crema or Sour Cream 1/4 cup of freshly squeezed lime juice (2 medium limes) 1/2 TSP of Cayenne pepper (optional) 1/4 TSP Smoked Paprika Some Olive oil or Vegetable Oil Tajin Seasoning, for sprinkling Chopped fresh Cilantro for garnish Instructions: Stir 3/4 cup grated Cotija cheese, 1/2 cup mayo, 2 tablespoons of Mexican crema, 1/4 cup lime juice, 1/2 teaspoon cayenne pepper if using, and 1/4 teaspoon smoked paprika together in a medium bowl. Place 6 husked ears of corn on something like a baking sheet or a tin pan like I used. Drizzle with some oil and use your hands to coat and flip the corn until evenly coated. Season all over with a touch of kosher salt. Heat an outdoor grill for direct, medium-high heat (450ºF to 475ºF). Place the corn on the grill. Cover and grill, turning the ears every 3 to 4 minutes, until the corn is tender and slightly charred in spots on all sides, around 15 to 20 minutes total. (You can also roast in your oven at 425°F for around 15 minutes and then broil for 5 minutes to get a good char) Generously spread the Cotija mixture over all sides of the corn. Sprinkle with Tajín seasoning and garnish with chopped fresh cilantro leaves if desired.
