Watermelon Salsa

WATERMELON SALSA puts a twist to this pan-fried fish dish! Ingredients Fish: 4 cloves garlic, minced 3 tablespoons minced fresh parsley 2 tablespoons extra-virgin olive oil 2 tablespoons minced fresh mint leaves 1 tablespoon freshly squeezed lemon juice 1 teaspoon fresh lemon zest fine sea salt and freshly ground black pepper to taste 2 white fish (tilapia, bass, cod, haddock, etc.) fillets Watermelon Salsa: 2 cups diced watermelon 1 cup diced plum tomatoes 1/4 onion, minced 1/2 to 1 jalapeño pepper, deseeded and minced 2 tablespoons minced fresh cilantro salt and freshly ground black pepper to taste 2 teaspoons olive oil, or as needed Preparation: Mix garlic, parsley, olive oil, mint, lemon juice, lemon zest, and salt and pepper together in a bowl. Rub the herb pasta gently onto the filets and allow to rest at room temperature while you make the salsa. Mix the watermelon, tomatoes, onion, jalapeno, and cilantro together in a bowl. Season with salt and pepper. Heat olive oil in a large nonstick skillet over medium heat. Cook fish until the flesh flakes easily with a fork, 2 to 3 minutes minutes per side. Serve immediately with the watermelon salsa.
