CLICK THE SHOW MORE BUTTON BELOW ↓↓↓↓↓↓ Sticky Toffee Pudding Serves 6 – 8 Time – Approx 30 minutes Ingredients: Pudding: 100g dates – chopped into small pieces 50g boiling water ½ tsp bicarbonate of soda 50g double cream (or non-dairy alternative) 100g butter – soft & room temperature (or non-dairy alternative) 100g dark brown muscovado sugar 2 tbsn black treacle 2 medium eggs (8g vinegar & tsp of baking powder mixed together or 3 tbsn's of apple sauce as an egg replacement - add before folding in the flour) 120g self-raising gluten free flour (Dove’s farm) Sauce: 200g dark brown muscovado sugar 75g butter (or non-dairy alternative) 300g Double cream (or non-dairy alternative) 2 tbsn black treacle Pre heat oven - 180 °C (no fan) 160°C (fan assisted) - Middle shelf. Grease a 2l pudding dish with some butter. Chop the dates and put them in a small bowl with the boiling water. Add the ½ tsp of bicarbonate of soda and mix around. It Let the dates sit in the bicarb & water mixture as you prepare the rest of the pudding. In a large bowl beat the sugar and butter together till soft and creamed together. Beat in the treacle till mixed through. Beat in the egg one at a time. Take the bowl with the dates & water, it should have thickened and softened the dates. Using a fork mix and mash up the dates and then stir through the pudding batter. Pour the batter into the greased pudding dish and place in the pre-heated oven and bake for 20 – 25 minutes. Test if cooked by sticking a skewer into the sponge, it will come out clean if cooked. As the pudding bakes make the sauce. Add all the ingredients to a saucepan and simmer on a medium heat for approximately 5 - 10 minutes until the sauce is thick and silky. When the sponge is cooked remove from the oven. Prick the sponge liberally with a skewer. Pour over some of the toffee sauce so it covers the top of the pudding. Spread it out so it covers the top evenly. Serve it up with extra sauce and cream.
