We are Travelling in Tunis Tunisia and today we tasted delicious Tunisian food for the first time. Tunis is the sprawling capital of Tunisia, a country in North Africa. It sits along Lake Tunis, just inland from the Mediterranean Sea’s Gulf of Tunis. It’s home to a centuries-old medina and the Bardo, an archaeology museum where celebrated Roman mosaics are displayed in a 15th-century palace complex. The parklike ruins of ancient Carthage sit in the city’s northern suburbs. Tunisian couscous is a national dish of Tunisia, consisting of steamed semolina granules served with a spicy, red, tomato-based stew that typically includes meat, vegetables, and chickpeas. It is distinct from other couscous dishes because of its often spicier flavor profile, which is a result of using harissa and meat broth, and its preparation method, where the couscous is steamed over the stew using a special pot called a couscousiere. Tunisian ojja is a dish of eggs scrambled in a spicy tomato and pepper sauce, often incorporating other ingredients like sausage, seafood, or meat. It is similar to shakshuka, but the term "ojja" specifically refers to eggs being stirred or scrambled into the simmering sauce, creating a more rustic and quick-cooked meal. It is frequently seasoned with harissa for a spicy kick and served hot with bread for dipping.
