Clean and dry the curry leaves. To a wide pan, add three tbsp. of chana dal, three tbsp. of urad dal and roast it to a golden brown colour. Then add two tbsp. of coriander seeds, one tsp cumin seeds, eight red chillies, 4-5 small bits of tamarind, 5 cloves of garlic and roast it all in a low flame. Add the curry leaves to it and roast in a low flame till the moisture goes off, colour changes and it becomes crisp. At this stage add one tsp of rock salt, quarter tsp of asafoetida powder and mix well. Transfer it to a plate, let it cool completely. Once cooled, transfer it to a mixer jar and grind to a nice fine powder. Let the powder cool completely, once cooled you can bottle it in an airtight container and store. For preparing curry leaves idli podi, take a wide pan and heat it. Add three tsp of sesame oil or ghee, add the prepared mini idlis and toss it nicely in the oil.. Add one tbsp of freshly ground curry leaves podi and mix well. Curry leaves podi idli is done now… Finally add one tsp of ghee and mix it, Serve it nice and hot.
