Ingredients: 1/2 kilo sweet potatoes 1 cup all purpose flour 1/2 cup sugar 1/2 cup powdered milk 2 eggs (for coating) 1 cup of breadcrumbs (for coating) oil (for deep frying) Directions: Peel the sweet potatoes and slice them into large chunks. Wash and rinse and then transfer to a large pot. Pour enough water to cover the sweet potatoes. Cover the pot and then bring it to a boil. After a few minutes of boiling, do the fork test to check if the sweet potatoes are soft. Then, drain the liquid and transfer the sweet potatoes to a separate plate. Mash the sweet potatoes using a fork. Transfer the mashed sweet potatoes to a bowl. Add the flour, powdered milk and sugar. Mix until well combined. Knead using your hands until you form a sticky dough. Grab a scoop of the dough and then roll into a ball. Make it a little flat and then poke a hole in the middle to resemble a doughnut. Do this with the rest of the dough. On a separate plate, crack the eggs and whisk them well. On another plate, add the breadcrumbs. Dip each donut in the egg and then in the breadcrumbs. Do this to all the donuts. Heat a lot of oil using low heat. Deep fry the sweet potato donuts for a few minutes. Flip to cook evenly. Once golden brown in color, transfer the donuts to a strainer or paper towel to drain excess oil. Transfer the sweet potato donuts to a serving plate. You can enjoy them as it is or have some chocolate, strawberry or caramel dipping sauce. You can also add sprinkles and toppings! Yum!
