Roosterkoek is another traditional South African side dish usually served at a braai (barbeque). It's a type of bread cooked over coals or low fire. They can be made with or without a filling, sweet or savoury. Our favourite is garlic butter and/or cheese. What is your favourite filling? Serves: Serves 2-4 Ingredients 1kg All purpose flour 10ml Salt 30ml Sugar 10ml instant dry yeast 30ml cooking oil 750ml lukewarm water Add the sugar with some lukewarm water in a bowl and mix. Add the yeast and wait for it to foam, about 10 minutes. Sift the flour and add salt in a large bowl. Add the yeast mixture, oil and some water, mix and add more water until a soft, sticky dough form. Cover the dough with a damp cloth and leave to rise for about 30 min. Knock it down and knead for 5 minutes, or until the dough is smooth and elastic. Cover and leave to rise for another 30 mins, or until doubled in size. Roll out the dough and cut out rectangles. Add your filling to the one side of the dough and fold over, make sure to close the ends by pressing down on each side. Place onto greased baking trays. Bake over coals on a braai grid (don't close it completely as the dough will rise and stick to the grid) or in an unoiled griddle pan on the stovetop until done.
