Butterscotch ice cream is rare, I now know why it is. It's not difficult to make but people panic when the "Butter" goes anywhere which is a shame as this ice cream has the potential to be BEAUTIFUL and is (if only for 2 days!). EDIT: ON DAY 3 IN THE FREEZER , THE HIGH BUTTERFAT BECOMES VERY NOTICABLE. I'M GOING TO MAKE THIS AGAIN IN A FEW WEEKS WHICH WILL SORT THIS ISSUE BUT IF YOU WANT IT, THE RECIPE IS BELOW. What you need: Honeycomb Candy/Hokey Pokey/Cinder Toffee: 200g sugar 100g golden syrup/corn syrup 10g Bicarbonate of soda Ice Cream Base: (this will all change in the next version of this ice cream) 350ml Milk @ 2% 350ml Cream @ 33% 80g Brown Sugar 10g Dextrose 2 Egg yolks 90g of Butterscotch Sauce (see below) keep the rest (heat to 107c MAX) 55g SMP 1.5g Stabiliser (or 2 egg yolks) Butterscotch Sauce: 150g Brown Sugar 90g Butter 90g Cream Yes there a few components, you don't need to make all of it, the honeycomb candy is a luxury add in for this recipe. ----------------------------- Do you like Butterscotch?
