Can be made to a 3 ingredient recipe without the cinnamon (if you prefer) Banana pancakes 2 Bananas (plus more to serve) 1 ½ Cup Oats (For gluten-free pancakes, make sure these are gluten-free) ¾ cup plant milk 1 tsp Cinnamon Toppings: Yogurt, Blueberries, Maple Syrup Instructions Blend your oats to form a flour-like consistency In a bowl, mash your two bananas Add the Oat Flour, Cinnamon, and plant milk and mix well Lightly grease your pan with oil and place on medium heat. Spoon on a small amount and use the back of the spoon to make the pancake a round shape After a minute or so, flip the pancake over to cook the other side You should get 5 - 6 pancakes out of this mix, any leftover you can make a tiny pancake and cut it into a star for decoration. Layer your pancake stack up using slices of banana in between each layer. Spoon on the plant-based yogurt, drop the blueberries on top, and drizzle the maple syrup all over.
