We started with a mushroom risotto, and I mentioned we’d be using the leftovers to make arancini. I love dipping mine into a proper marinara — and this is that sauce. If you want to see how it all comes together, start with the risotto video, then join me for the arancini. 🛒 Ingredients: ½ white onion, finely diced 2 garlic cloves, finely chopped Olive oil 1 tin quality tomatoes (I used Mutti – use the best your budget allows) Pinch of salt Pinch of sugar Dried herbs (I used my Italian mix: oregano, rosemary, thyme, peperonata, garlic powder) Small bunch fresh basil (stalks included) 👨🍳 Method: Gently sauté the finely diced onion in olive oil over medium heat until softened. Add the chopped garlic and cook for about 1 minute. Pour in the tomatoes. Add a pinch of salt and sugar. Stir in your dried herbs and the fresh basil (stalks included). Place a lid on slightly ajar and simmer for around 10 minutes until thickened and rich.
