I recently watched a video with ‪@JKenjiLopezAlt‬ over on ‪@NYTCooking‬ (link below) of him making the "Crispiest Roast Potatoes" Then I fell down a rabbit hole of crispy roasted potato recipes and I noticed that they almost all followed the SAME Exact formula.... 3 lbs potato, 2 tbsp salt, 1/2 tsp baking soda... Why? Well from what I can find it started with Kenji Lopez Alt 7 years ago when he was perfecting his roasted potato recipe and it seems everyone followed.
