Hi, I'm Rana, the owner of a cooking channel on YouTube. In this video, I'm going to show you how to make Abgoosht, one of the most traditional and authentic Iranian dishes. Abgoosht means "meat broth" in Persian, and it is a hearty stew made with lamb, potatoes, chickpeas, tomatoes, and various spices. It is usually cooked in a clay pot over a fire, which gives it a rich and smoky flavor. I made this Abgoosht with the help of my sister Soheila and my mother in our village house's yard. We had a lot of fun preparing the ingredients, chopping the meat, peeling the potatoes, and blending the tomatoes. We also enjoyed the fresh air and the beautiful scenery of our village, which is located in the northwestern part of Iran. You can see the green fields, the mountains, and the blue sky in the background of our video. Abgoosht is a very old dish that dates back to the ancient times of Iran. It is said that it was originally made with camel meat by the nomads who lived in the desert. Abgoosht is also a very nutritious dish that provides a lot of protein, carbohydrates, vitamins, and minerals. It is especially popular in the cold seasons, as it warms up the body and the soul. Abgoosht is usually served with bread, pickles, yogurt, and fresh herbs. There are two ways to eat Abgoosht: one is to separate the broth from the solids and drink it as a soup; the other is to mash the solids with a wooden masher and eat it as a thick paste.
