Box 453 Greenwell Springs, LA 70739 EMAIL: [email protected] INSTAGRAM: / tales_from_an_empty_nest ENERGY BITES: 1 cup old fashioned oats 1/2 cup mini chocolate chips 1/2 cup ground flaxseed 1 cup coconut 1/2 cup peanut butter 1/3 cup honey Mix the dry ingredients. In another bowl, mix the wet ingredients. Mix together and form into balls. Place on a cookie sheet to freeze and then put them in a freezer bag. Take them out the night before you want them to let them thaw GRANOLA BARS: 5 cups old fashioned oats 4 1/2 cups rice krispies 1 sleeve graham crackers, crushed 1/4 cup coconut oil 1 1/2 sticks butter 1/4 cup honey 1/4 cup peanut butter 10 oz mini marshmallows Mix dry ingredients in a large bowl. Add the coconut oil, butter, honey, peanut butter and marshmallows to a pot. Slowly heat until everything is melted and smooth. Pour over the dry ingredients and mix until everything is coated. Pour onto a large cookie sheet lined with parchment paper and press down firmly. Put in the fridge to completely cool and set up. Cut them and put them in a freezer bag and store in the freezer. Thaw overnight on the counter when you're ready to eat them. COOKIE CUPS: 1 roll premade cookie dough Cut the dough into 12 equal pieces. Place cookies into a well greased muffin pan. Bake at 350F for about 15 minutes. While they're warm, carefully press with a tart tamper or whatever you have if you want them a little deeper. Let them cool completely and then store in a freezer bag in the freezer until ready to eat. Thaw on the counter. GRANOLA YOGURT BITES: 1/2 large container of yogurt 1/2 container of cool whip Granola In a bowl, mix together the yogurt and cool whip. Put a little bit of granola into 12 silicone muffin cups. Layer in the yogurt mixture. Top with a little more granola. Freeze on a cookie sheet. Once frozen, pop them out of the silicone cups and store in a freezer bag. Eat frozen or let them sit on the counter for 5 minutes before eating. BANANA BREAD: Ingredients and Recipe are in the description of the original video linked above. To cook these mini loaves, Bake at 350F for 25-30 minutes. Let them cool completely, cover with foil and freeze. To thaw, let them sit on the counter overnight. APPLE/CHERRY CRISP: 2 cups all purpose flour 2 cups brown sugar, packed 1 cup old fashioned oats 1/4 tsp cinnamon 1/8 tsp nutmeg 1 cup butter, melted Pie filling of your choice, 2 cans Mix the dry ingredients in a bowl. Add the butter and mix until completed coated. You may need to use your hand to make sure it's mixed well. Spray mini pans. Divide each can of pie filling into 4 pans. Sprinkle a good layer of the crumble on top. Cover and freeze. Thaw in fridge overnight. To bake, remove lid if it has paper and cover with foil. Bake at 350F for 20 minutes, remove foil and bake another 15-20 minutes. PEACH/APPLE COBBLER: Ingredients and instructions are in the description box of the original video linked above. For these mini cobblers, divide each pie filling or peaches between the 8 pans. Bake at 400F for about 25 minutes. Let them cool completely, cover and freeze. When you're ready to eat them, you can thaw in the fridge overnight and then just remove from pan and heat in the microwave. CHOCOLATE CHIP SOURDOUGH DISCARD COOKIES: Ingredients and instructions are in the description box of the original video linked above. Once you're rolled the cookie dough into balls, you will place them on a cookie sheet and freeze. Once frozen, place them into a freezer bag. When you're ready to bake, remove however many cookies you want and cook them (frozen) using the same baking instructions from the original video except you will add about 2 minutes to the baking time.
