Yam Cake - The Traditional One

This recipe is passed down from my grandmother to my mother. It's really the true authentic Chinese Hokkien-style yam cake that you can hardly find in hawker centres. Recipe : 250gm of yam (preferably yam from Thailand) 1 Chinese sausage 3 dried mushrooms 40 gm dried shrimps 30 gm dried scallops (optional) 200 gms rice flour and 3tsp corn starch thoroughly mixed with 350ml water 450ml water (approx 250ml can be obtained from the soaked shrimps) 5 shallots for frying and 5 shallots for garnishing 0.5 tsp salt 0.25 tsp 5-spice powder 1 tbs oyster sauce 1 tbs of light soya sauce 1 tsp of sugar Generous dashes of white ground pepper
