Take Paik Jong Won’s know-how and large-scale recipe as a base, and add your own effort and research to create your own special flavor of spicy noodles! =================================== Spicy Noodles (Kang’s Kitchen 2) [Ingredients] 60 servings (1 serving = 110g) Ground pork 5 cups (1kg) Water 3 cups (540g) Onion 3 cups (210g) Green onion 8 1/3 cups (600g) Cooking wine 3 cups (540g) Brown sugar 3 cups (420g) Starch syrup 3 cups (780g) Dark soy sauce 6 cups (1200g) Pear puree 4 cups - 2 pears + water 2 cups (pear 640g + water 360g) Minced ginger 1 1/2 tbsp (28g) Minced garlic 250g Fine chili powder 5 1/2 cup (560g) Pepper 1 1/2 tbsp (12g) Thin noodles Thick noodles Fresh noodles *Toppings - Per 1 serving Ripened kimchi 50g Pickled radish 20g Scallions 10g 1 egg 60g Sesame seeds [Directions] *Sauce 1. Place chopped green onion, minced onion, ground pork, water, cooking wine, brown sugar, starch syrup, and dark soy sauce in a pot and bring to a boil. 2. Cook until meat is fully cooked, turn off heat and cool in a bowl. 3. Add pear puree, minced garlic, minced ginger, fine chili powder, and pepper in cooled sauce and mix. *Plating 1.
