Recipe in English Delicious Mutton Masala Recipe Ingredients and Steps: Heat the Oil: Heat 4 tbsp mustard or sarson oil in a pan. Prepare Onions: Slice 2 medium-sized onions into large slices. Add them to the hot oil and fry for 3 minutes until light brown. Remove the fried onions onto a plate and let them cool. Make the Paste: In a blender jug, add: 4 large green chilies 1-inch piece of ginger 6–7 garlic cloves Half a bunch of fresh coriander leaves. Add the cooled fried onions. Blend all ingredients into a coarse paste (not too fine). Remove the paste into a bowl for later use. Prepare the Spice Mix: In a grinder jar, add: 2 tbsp whole coriander seeds ½ tbsp black peppercorns 1 tsp cumin seeds 3 cloves 2 large cardamom pods ½ piece mace (javitri) 4 small cardamom pods 1 star anise (badyan ka phool). Grind these into a fine powder. Set aside. Cooking the Mutton: Return to the pan with the leftover oil (used for frying onions). Add 2 dried red chilies (broken) to the oil. Keep the flame medium. Add: 2 bay leaves 1 piece of cinnamon stick. Mix for 30 seconds. Add 500 grams of mutton (bone-in, slightly large pieces). Fry on high flame for 5 minutes until the color changes. Add: ½ tsp salt 1 tsp Kashmiri red chili powder ½ tsp turmeric powder. Mix well and cook for 2 minutes. Add the prepared onion paste and mix thoroughly. Lower the flame to medium-low and add ½ cup whisked yogurt. Stir well to ensure smooth mixing (to avoid curdling). Let the mutton and yogurt release their juices. Add the Spice Mix: Add 1 tbsp of the prepared spice powder. Mix well. Increase the flame to medium and add 1 cup of water for cooking the mutton. Cover the pan and let it cook for 40–45 minutes on medium flame, stirring occasionally. Final Touch: After 40 minutes, check if the mutton is tender. Adjust salt and spices as needed. Garnish with: 1-inch julienned ginger 2 finely chopped green chilies 2 tbsp chopped fresh coriander leaves. Add 2 tbsp butter for a fragrant finish. Mix gently. Steam and Serve: Cover and steam on low flame for 5 minutes. Turn off the flame and dish out. Garnish with julienned ginger, green chili slices, and coriander. Serve with lemon slices alongside roti, naan, sheermal, taftaan, or parathas. Enjoy!
