I hope you find some inspiration in this What I eat in a day to lose WW! #funfettipancakes #copycatlonghornparmesanchicken #wwblue #what I eat to lose weight email:4theloveofood@gmail.com Instagram:WWCelissa ✨✨Recipe for: Copycat Longhorn Chicken Parmesan Ingredients • 2 thin sliced chicken breasts • 2 tsp butter • 2 Tbsp ranch dressing (your favorite) • 1/4 cup mozzarella cheese • 1 Tbsp breadcrumbs (May use panko) • 10 gm shredded Parmesan cheese • 1 tsp grated Parmesan cheese (optional) • Salt and pepper to taste Instructions • Season chicken breasts with salt and pepper to taste. (Be aware Parmesan is salty and will add some salt flavor later. I’ve also used Perdue Italian preseasoned breasts and added a touch more salt and pepper ) Place chicken to the side to marinate for 10-15 min. • Heat oven to 375degrees • Melt 1 tsp butter in non stick skillet and cook chicken breast for 3-5 min on each side only flipping once • While chicken is cooking, mix mozzarella and ranch in a small bowl. • Remove chicken from skillet and transfer to oven safe dish (spray before with oil spray if not non-stock dish) • Top chicken breasts with ranch/mozzarella combo spreading evenly. • Sprinkle on shredded Parmesan, then bread crumbs and grated Parmesan • Melt 1 tsp butter and pour over top. • Bake for approx 10 min until cheese melts and then broil for 3-5 min for brown color. Notes: I personally use regular mozzarella and regular ranch. Lower point options would be using low fat mozzarella. Also, I’m not sure how a yogurt based ranch, i.e. Bolthouse ranch, would do during the cooking process.
