Cold Proof or Warm Proof | sourdough bread experiment ASMR

Testing the difference between a warm proof (75-80f) and a cold proof. The recipe is the same for both loaves. All the other steps can be found in this video here:    • Sound of Sourdough | Baking ASMR for ...   Levain: 100g starter (out of the fridge) 100g room temp water 50g whole wheat flour 50g all purpose flour I place mine in the microwave with the door cracked over night. Th warmth from the light is perfect for activating it. Ratios: 400g all purpose flour 100g whole wheat flour 10g salt 12g wheat protein 350g water 100g levain (active starter) Handful of sunflower seeds Mix everything together, start a 4.5 hour timer for bulk fermentation. My temp is between 75-80f. While the timer is going do 4 sets of stretch and folds 15-20 minutes apart and lastly lamination. Let ferment until timer goes off. Shape loaves. Place in fridge over night. The next morning, enjoy a cup of coffee while the oven preheats. I preheat to 500 with the Dutch ovens in. Score the loaves, place in the pans, drop the temp to 450-465f (depends on your oven/desired crust color). Bake with lids on for 25 minutes, I pour some water in the bottom of the pan. You can drop in an ice cube or sprits some water in, or just forgo that step. Take the lids off for 15 minute, or to desired crust color. Let cool and enjoy.
