Recipe Strawberry Cinnamon Rolls – The Valentine’s Day Dessert You NEED to Try! Ingredients: For the Dough: • 4 cups (580g) all-purpose flour • 1/2 cup (107g) granulated sugar • 3/4 tsp (6g) fine sea salt • 1/3 cup (84g) butter • 1 cup (235g) lukewarm whole milk • 2 1/4 tsp (7g) instant yeast • 2 eggs • 1 egg yolk For the Strawberry Filling: • 300g (1 3/4 cups) strawberries, chopped • 30g granulated sugar • 1.5 tbsp lemon juice • 1/2 tsp vanilla extract • 1/2 tsp salt • 3g cinnamon For the Cinnamon Sugar: • 80g granulated sugar • 50g light brown sugar • 1.5 tbsp ground cinnamon For the Strawberry Frosting: • 1 oz freeze-dried strawberries (or raspberries), chopped into powder • 200g powdered sugar • 80g butter (room temperature) • 115g cream cheese • 1/2 tsp salt • About 1/2 cup heavy cream • 1 tsp vanilla paste Instructions: 1. Make the Dough: • In a large bowl, combine flour, sugar, and salt. Set aside. • In a separate bowl, melt the butter and add it to the lukewarm milk. Stir in the yeast, eggs, and egg yolk. Mix until combined. • Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. • Knead the dough for 6-8 minutes until smooth and elastic. If the dough is too sticky, add a little more flour. • Place the dough in a greased bowl, cover with a damp towel, and let it rise for 1-2 hours, or until doubled in size. 2. Prepare the Strawberry Filling: • In a small saucepan, combine the strawberries, sugar, lemon juice, vanilla, salt, and cinnamon. • Cook over medium heat for 5-7 minutes, stirring occasionally, until the strawberries soften and the mixture thickens. • Remove from heat and let it cool. 3. Prepare the Cinnamon Sugar: • In a small bowl, mix together the granulated sugar, brown sugar, and ground cinnamon. Set aside. 4. Assemble the Rolls: • Preheat your oven to 350°F (175°C). • Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle, about 1/4 inch thick. • Spread the strawberry filling evenly over the dough, leaving a small border around the edges. • Sprinkle the cinnamon sugar mixture on top of the strawberry filling. • Carefully roll the dough into a tight log, then slice into 12 rolls. • Arrange the rolls in a greased baking pan, leaving a little space between each. Cover and let them rise for another 30 minutes. 5. Bake the Rolls: • Bake for 20-25 minutes or until the rolls are golden brown. Let them cool for a few minutes before frosting. 6. Make the Strawberry Frosting: • In a food processor, blend the freeze-dried strawberries into a fine powder. Sift the powder through a strainer to remove any larger pieces. • In the same food processor, combine the powdered sugar, butter, cream cheese, salt, heavy cream, and vanilla paste. Whisk on high speed until smooth and creamy. • Once the rolls have cooled slightly, generously spread the strawberry frosting on top. 7.
