How to make this delicious Brioche Cheese Steak Buns. Here's what you'll need: BRIOCHE DOUGH: 3 and 1/2 cup bread flour (440g) 1/4 cup sugar (50g) 2 tsp instant yeast (6g) 1 tsp salt (5g) 1/2 cup milk (125ml) 2 large eggs 1/3 cup butter-75g (unsalted) BEEFSTEAK FILLING: 400 grams Beef tenderloin 1 tsp black pepper 1/2 tsp salt 1 tsp paprika 1 tsp garlic powder 1 tbsp worcestershire sauce 1 big sized onions (sliced) small sized red and green bell peppers (sliced) Some shredded mozzarella for filling 1. In a standmixer bowl, combine bread flour, yeast, sugar and salt. Add milk and eggs. Place in a standmixer, attach dough hook and set at speed or medium speed for 2 minutes. Then gradually add unsalted butter. Knead for another 3 minutes or dough is smooth. 2. Smooth into a ball, coat with oil and place in a bowl. Cover for 1 hour or until doubled in size. 3. In a pan, stir fry beef tender loin, add black pepper powder, salt, paprika, garlic powder, worcestershire sauce. Cook until brown then add onions and red and green bell peppers. Cook about 3 minutes. Then set aside to cool down. 4.Back to proofed dough: Punch the air out. Transfer to a floured counter. Divide into 12 equal pieces. Roll into a ball. Bench rest for 10 to 15 minutes. 5. Roll out each dough balls, place shredded cheese and filling. Gather edges and pinch to seal. 6. Place in a line baking sheet pan. Cover for 30 minutes. Preheat oven at 170C/340F for at least 15 minutes. 7. Mix 1 egg yolk and 1 tbsp milk for egg wash. Brush each proofed brioche buns with egg wash. 8. Bake for 20 to 22 minutes or until golden. 9.
