Today, we are making a Shahi Sabudana Kheer—a rich, creamy, and royal dessert that is perfect for fasting (Vrat) or as a sweet treat for your guests. In this video, you will learn: The correct way to soak Sabudana for a non-sticky texture. How to thicken the kheer naturally without extra additives. The "Shahi" touch: Adding saffron and fried nuts for that authentic flavor. Ingredient Quantity ●Sabudana (Sago) ½ Cup (Soaked) ●Full Cream Milk ½ Liter ●Sugar ¾ Cup (Adjust to taste) ●Cardamom Powder ½ tsp ●Dry Fruits (Almonds, Cashews,Raisins) 2 tbsp (Chopped) ●Saffron (Kesar) A pinch (Soaked in warm milk) ●Ghee 1 tsp Step 1: Preparing the Sabudana "First, wash half a cup of sabudana 2–3 times under running water to remove excess starch. Soak it in just enough water to cover the pearls. Let it rest for 4–5hours until the pearls are soft and press easily between your fingers." Step 2: Roasting the Nuts "Heat one teaspoon of ghee in a heavy-bottomed pan. Lightly fry the chopped dry fruits until they turn golden brown. Remove them and set aside; roasting them in ghee adds a wonderful crunch and aroma." Step 3: Boiling the Milk "In the same pan, add ½ liter of milk. Bring it to a boil on medium flame, stirring occasionally to make sure it doesn’t stick to the bottom or burn." Step 4: Cooking the Sago "Once the milk starts to thicken slightly, add the soaked sabudana and roasted dry fruits . Cook on low to medium heat. You’ll know it’s ready when the pearls become transparent and start floating on the surface." Step 5: The Final Touch "Now, add the sugar, saffron milk, and cardamom powder. Simmer for another 4–5 minutes until the kheer reaches your desired consistency. Pro-Tip: If the kheer becomes too thick after cooling, simply add a little warm milk to adjust the consistency before serving. "And there you have it! Your rich and creamy Sabudana Kheer is ready. You can serve it warm or chilled—it tastes amazing both ways!
