Easy Vegan Thanksgiving sides that you must try. These recipes are easy basic recipes. Not fancy but so satisfying. My non vegan family loves these sides. Full recipes below #thanksgiving #vegan #veganrecipes GLUTEN FREE VEGAN STUFFING 4 cups gluten free bread cubed 1 cup each chopped celery and onion 1 cube not chicken bouillon 2 cups water salt and pepper to taste Preheat oven to 425 degrees Add the cubed bread on to a lined baking sheet, make sure it is in a single layer. Bake for 10 minutes. While the bread is crisping up add a couple of tablespoons of water to a deep pot. Heat on medium and add the celery and onions and saute for 5 to 6 minutes until soft. Add the bouillon to the water and heat in microwave or on the stove unitl bouillon is dissolved. Once the bread is done add to the pot and add in 1 cup of the broth. Mix well until most of the moisture is gone. If you need more that add more broth a little at a time. You can store the leftover in a glass jar for a week to use in other recipes. Add the stuffing into an 8x8 baking dish and back into the oven for 20 minutes uncovered. SERVES 4 CALORIES 173, FAT 3.9G, CARBS 34.8G, PROTEIN 1.7G FIBER 4.4G MY FAMOUS MASHED POTATOES 6 to 7 medium Yukon gold potatoes (or your choice) 1/2 cup unsweetened soy milk 1/2 cup plain vegan Greek yogurt salt and pepper to taste Peel and quarter your potatoes and place in a pot and cover with cold water. Bring to a boil then simmer until potatoes are fork tender about 20 minutes. Drain potatoes and add back to the pot. First use a hand masher to get rid of the big clumps. The add the milk and yogurt and use a hand mixer to make sure you get the lumps out. Do not over mix or they will become gluey. Add a salt and pepper to taste. serves 4 calories 217, FAT 1.6G, CARBS 44.2G, PROTEIN 8.9G, FIBER 3.3G HIGH CARB HANNAH'S GRAVY Into a glass jar add 4 Tablespoon flour ( I used gluten free) 1 Tablespoon each Nutritional yeast, onion powder, garlic powder, poultry seasoning. Mix well and store in cupboard until read to use. This recipe is for 4 servings. When you are ready to make your gravy, remove 2 Tablespoons of the dry gravy mix and add to a small sauce pan. Add 1/2 cup water and 2 Tablespoons of coconut aminos or soy sauce. Heat over medium heat and whisk till smooth and thick. You can add more water if you would like it thinner.
