Follow Brendan Rooney: Instagram:   / thebrendanrooney   Watch Christy's Kitchen Throwback:    • CHRISTY'S KITCHEN THROWBACK | Christy Carl...   RECIPE: Vegan Lemon Loaf Ingredients For the Cake: 1 3/4 Cup Flour 3/4 Cup Cane Sugar 1/4 Cup Fresh Lemon Juice 2 Tbsp Lemon Zest 1 Tsp Vanilla Extract 1/2 Cup Melted Vegan Butter 3/4 Cup Plant Milk 1 1/2 Tsp Baking Powder 1/4 Tsp Baking Soda 1/4 Tsp Salt For the Icing: 3 Tbsp Fresh Lemon Juice 1 1/2 Cups Vegan Powdered Sugar For the Sugar Syrup: 2 Tbsp Fresh Lemon Juice 2 Tbsp Cane Sugar Instructions 1.Preheat oven to 350 degrees. 2.Add your lemon juice, lemon zest, vanilla, melted vegan butter and plant milk to a large bowl, mix well. Add cane sugar and mix very well until combined. 3.In a separate bowl, mix together the flour, baking powder, baking soda and salt. Add flour mixture in increments to wet mixture, whisking together well in between, until well combined. Spray or oil a loaf pan and pour cake mixture into pan, tapping the pan on a flat surface to even the mixture out. 4.Bake for 40-45 minutes or until a toothpick inserted into the middle of the cake comes out clean. 5.While baking, gently heat up 2 tablespoons of lemon juice and stir in 2 tablespoons of cane sugar for your simple syrup. Allow to cool. Once cake is done, cool in the pan for 10 minutes, then place on a cooling rack. Poke tiny holes throughout the cake and pour in syrup mixture evenly. Allow the cake to fully cool. 6.Mix together 3 tablespoons of lemon juice with the 1 1/2 cups of vegan powdered sugar until very smooth. Pour evenly over cake and allow to set for a few minutes. Lemonade Ingredients 2 cups granulated sugar 1 1/2 cups fresh lemon juice , about 6-8 lemons 4 1/2 - 5 cups water , divided Instructions 1.Combine sugar and 2 cups water in a saucepan over medium heat. Bring to a boil and stir until sugar has dissolved. Remove from heat and cool to room temperature. 2.Strain the lemon juice through a fine-mesh sieve into a 2-quart pitcher. Add simple syrup and stir to combine. Refrigerate until cold. When ready to serve, add 2 1/2 cups of cold water and stir. Taste, and add more water if it's too sweet. 3.Serve with ice, thinly sliced lemons and fresh mint, if desired. Christy returned to Broadway in her mid twenties and learned to puppeteer in the Tony-Award winning 'Avenue Q'. Christy was married to her husband on New Years Eve , 2013 in Banff, Canada after having met in a screenwriting class in college. She became impassioned with directing and made her debut in Lionsgate's "Christmas All Over Again". While she still works as an actress, she enjoys living in Orange County with her husband, Brendan Rooney, and daughters, Isabella and Sophia.
