Come into ALDI with me see what I bought for a week of groceries for my family of 5. I always use items from my pantry/freezer as well. I share my dinner meal plan at the end. Also, I do NOT buy my groceries exclusively at ALDI, but they're the first place I try and my favorite to shop at. Menu & Recipes for the week Monday: Qdoba - first day of school celebration out to eat. Family favorite! Tuesday: Birria Tacos (recipe: • How I Make the@ALDIUSA Birria Roast! ), Heuvos Racheros (inspo recipe: https://pin.it/MmIFyFt5b), refried beans (recipe: https://pin.it/2HlsyVmkp) Wednesday: Vegetable Soup Vegetable Soup & Crusty Bread: Soup: Ingredients: Frozen California Blend (32 oz) Frozen Mixed Veggies (10-16 oz) 1-2 Cans of Diced Tomatoes (2 15oz or 1 28 oz) 2 cans sliced potatoes 1 Carton Beef Stock (or vegetable) 2 cans tomato juice Italian Seasoning (1 tbsp +/-) Salt (1 tsp +/-) Pepper (2 tsp +/-) Garlic Powder (1 tsp +/-) Onion Powder (1 tsp +/-) Minced Onion (2 tsp +/-) Combine all soup ingredients and slow cook (I still use my instant pot) for 7-9 hours. I just let it go all day. SO EASY to prepare the night before and set in the morning! Perfect for busy days. Serve with Italian bread! Thursday: Lemon Chicken & Rice (recipe: https://pin.it/34E2kWtdW), Kale Salad (recipe: https://pin.it/7peM0BYea) Friday: Pizza and Salad - school year staple. Probably Hungry Howies if I were to guess! (Salads homemade) Saturday: Beef Bolognese (recipe: https://pin.it/6JvOQxbxd ) and rhodes rolls (family will likely use jarred sauce) Sunday: Sloppy Joes (frozen meat from the spring) with the Everything Brioche Rolls Cornflake Potatoes: Ingredients: 5 large russet potaotes, peeled and sliced 1 stick of butter (8 tbsp) 4 cups cornflakes 2 cups shredded cheddar cheese Paprika (1 tbsp +/-) Seasoned Salt (1 tsp +/-) Chili Powder (1 tsp +/-) Garlic Powder (1 tsp +/-) Onion Powder (1 tsp +/-) Preheat Oven to 350. Melt 4tbsp butter. Once melted, evenly speard butter on pan and place potato spears on pan. Cover with 2 more tbsp butter. Bake 20-30 minutes. Flip potatoes, cover with 2 more tbsp butter. Spread with mixture (cornflakes, shredded cheddar and seasonings). Bake additional 20-30 minutes. We error on the side to 30 minutes to ensure potatoes are well cooked. Remove and serve!
