Today, we're taking a trip to the tropic waters of the Caribbean sea with a dish that packs as much of a punch as it does flavor. We're kicking things off with my recipe for Caribbean Stew Short Ribs and Coconut and Pigeon Pea Pilaf. We start by searing the short ribs until they're golden brown. Then, this is so simple - it shouldn't even be a recipe - we throw everything into a pot and bake it in the oven for a few hours until the ribs are tender and falling off the bone.
