PERFECT NIGERIAN FRUIT CAKE RECIPE. Flour 250g Sugar 220g Margarine/salted butter 250g Eggs 5 (large) Salt 1 teaspoon Cinnamon 2 teaspoons All spice 1 teaspoon Baking powder 2 teaspoon Nutmeg 1 teaspoon Milk 1/4 cup Black treacle 1 tablespoon Golden syrup 2 tablespoons Browning 1 teaspoon Dried mixed fruit/Raisins (to your taste) Chopped almonds, coconut or cashews (optional) Brandy (optional) PROCEDURE *Measure out all ingredients. *Take about 5 tablespoons of flour from your already measured flour and use it to coat your raisins *To your remaining flour add your baking powder, cinnamon, salt, all spice and nutmeg and mix together. Mix butter until fluffy Add sugar into the butter and continue mixing Add in eggs one at a time. Add in black treacle, golden syrup, vanilla and browning Add in flour in two batches Add in milk Add in fruits Pour in a pan and add your preferred toppings.
