This filling is made by sauteing boiled potatoes with onions, mustard seeds, curry leaves, and an assortment of spices like turmeric, cumin, and sometimes green chilies. Accompaniments play a crucial role in enhancing the flavors of Masala Dosa. It's often served with an array of chutneys like coconut chutney, tomato chutney, and occasionally garlic chutney.
