Pineapple filling for cakes is easy and delicious! This recipe is made with fresh pineapple, so it is full of full of fruit flavor. Thickened with just the right amount of cornstarch, it is the perfect consistency for using in a coconut cake. If you want a detailed tutorial, be sure to watch my video! The most important part of this pineapple filling recipe is using fresh pineapple (or frozen) and not canned since fresh is so much more flavorful. I cut up and froze my pineapple the day before so that I wouldn't have to do as much work the day that I made my cake, but you can definitely do everything on the same day if you want. The first step is to put the fresh pineapple, sugar, and water in a pot on the stove. Although it might seem odd adding water, you need some extra liquid so that the pineapple doesn't burn as it cooks. Use a wooden spoon to break up the pineapple as you bring the water to a boil. Once the pot comes to a boil, continue cooking on medium heat for 10 minutes. Be sure to keep stirring and breaking up the pineapple. Over the course of cooking, stirring, and crushing, the pineapple filling will really start coming together. After cooking for 10 minutes, it's time to thicken the pineapple filling with cornstarch. As always, I made a slurry off to the side and then added it to the filling: cornstarch tends to clump up if added directly to a hot liquid. When I stirred in the slurry, the filling thickened in less than minute. I let the filling cool down for a few minutes before spreading it on top of the bottom layer of my coconut cake. It's important to not spread the filling all the way to the edge: the filling will get "squished" out the sides when you put on the second layer, so it's best to leave some space around the edge of the cake free of filling so that the filling can expand outwards. Honestly, this filling was absolutely delicious. It was a very nice addition to my cake. The only thing I would possible change would be adding a bit of lemon juice and lemon zest to really bring out the pineapple flavor. I made this filling before making my recent pineapple pie and pineapple cobbler recipes, and I noticed how much the lemon brought out the pineapple flavor in those two recipes, so I think it would be a nice addition to this pineapple filling with fresh pineapple recipe, too.
