Kathol Undhyu Ingredients: Mix sprouts - 1 cup. After soaking becomes 2 cup boiled mix sprouts. Cumin coriander powder - 1 tbsp Red chili powder - 1 tbsp Ginger garlic paste - 1 tbsp Green chili ginger paste - 1 tbsp Coriander leaves - 1 cup Shredded coconut - 1/2 cup Lemon juice - 1 tbsp Garam masala - 1 tsp Turmeric - 1 tsp Sugar - 1tsp Salt to taste Methi dhokli ingredients: Fenugreek leaves - 1 cup Gram flour (besan) - 1 cup Wheat flour - 1/2 cup Pinch of turmeric powder Salt to taste Red chili powder - 1/4 tsp Coriander cumin powder - 1/4 tsp Asafoetida - 1/4 tsp Kathol Undhyu Method: First, we shall make dhokli. Add a little salt to fenugreek leaves and mash it with hand and remove all the water. Post that add wheat flour, gram flour, salt, turmeric, red chili powder, coriander-cumin powder, asafoetida, 1 tbsp oil mix all well and add a little water at a time and then knead the dough to the consistency shown in the video. Then make small balls and fry it. Keep it aside. To prepare the gravy, take 2/3 tbsp oil in the pan. Once the oil is heated add cumin, garlic ginger paste, green chili-ginger paste. Saute it well and then add a little water as shown in the video up to 1/2 glass then add salt, red chili powder, coriander-cumin powder, turmeric powder, and sugar. Then after 2 min add the boiled sprouts and let it cook for 3/4 min. Then add coriander leaves, shredded coconut, and lemon juice. Check the consistency and add a little more water and then add dhokli and cook it for a few mins and then serve it hot. The super tasty kathiyawadi Kathol Undhyu is ready.
