A look at the Fried Chicken Mushroom (Lyophyllum decastes) also called the Clustered Domecap or Chicken in the Gravel. This mushroom is a delicious wild edible mushroom, but EXTREME CAUTION should be taken if you ever want to harvest this mushroom in the wild as it quite variable in it's appearance and has many dangerous look-a-likes such as the Livid Pinkgill (Entoloma sinuatum), as well as others in the Tricholoma, Collybia, and Clitocybe genuses to name few. The cap color can range from buff to tan to grey to brown, and even the gill attachment can vary. In truth the Fried Chicken Mushrooms are complex of mushrooms that with future genetic study will likely be separated into many sub species and variants. It's almost easier to identify this mushroom by ruling out what it's not, but that is some expert level mushroom sleuthing as you would need to know all the possible look-a-likes to do so and there a very large number of those. The good news is there's no need for FOMO, you can find the Fried Chicken Mushroom for sale online. In Japan it is referred to as Hatake Shimeji. You can also find its close relative the Hon Shimeji mushroom (Lyophyllum shimeji) for sale as well. In addition there are other mushrooms sold as Buna Shimeji (brown) and Bunapi Shimeji (white). These are the easiest to find as they are cultivated in mass but they are not a true shimeji mushroom. These are beech mushrooms in the genus Hypsizygus, but a reasonable facsimile for the Fried Chicken Mushroom. Rather than try to forage and consume the Fried Chicken Mushroom from the wild yourself, I suggest just purchasing some Shimeji mushrooms which is a much much safer option.
