This healthy pumpkin cheesecake is everything you want in a fall dessert — creamy, smooth, light, and completely guilt-free! 🍰 It’s made with real pumpkin puree, Greek yogurt, cottage cheese, and a touch of maple syrup — no refined sugar, no heavy cream, and still tastes unbelievably rich and silky. 💛 The perfect cozy dessert for fall — high in protein, low in sugar, and absolutely delicious! ⸻ 🧁 Ingredients for the Crust • 1 cup oat flour • 1 cup almond flour • 3 tbsp melted butter or coconut oil • 1 tbsp maple syrup (or any sugar-free syrup) • Pinch of cinnamon and salt Bake at 340°F (170°C) for 10–12 minutes until lightly golden. ⸻ 🍮 Ingredients for the Filling • 1¼ cup cottage cheese, blended until smooth • 1/2 cup Greek yogurt • 120 g light cream cheese • 3 tbsp whipping cream • 1¼ cans (≈530 g) pumpkin puree • 2 large • ¼ cup maple syrup or monk fruit syrup • 1 tbsp coconut sugar (optional) • 1 tsp vanilla extract • 1½ tsp cinnamon • ½ tsp ginger powder • ¼ tsp nutmeg • Pinch of clove powder and salt Bake at 325°F (160°C) for 50–60 minutes until the edges are set and the center is slightly jiggly.
