Follow us on Instagram: @pumpkinandpekoe Follow us on Facebook: /pumpkinandpekoe Email: [email protected] Pineapple Tea Cookies Recipe 1/2 cup (1 stick) vegan butter 3 tsp pineapple juice 1/2 cup white sugar 1/4 cup pineapple puree 2 cups all purpose flour 1/2 tsp baking soda 1/4 tsp salt 1/2 cup dried pineapple diced 2 tbsp almond milk 1 tbsp sugar 1. Add butter to a large mixing bowl and cream with a mixer. 2. Add pineapple juice, sugar, pineapple puree, and beat for 1 minute. 3. Add flour, baking soda and salt. 4. Mix until incorporated, being careful not to over mix. Use your hands if needed. 5. Add dried pineapple and form into a ball. 6. Cover and freeze dough for 15 minutes, or refrigerate for 30-45 minutes (up to overnight). 7. Five minutes before baking, preheat your oven to 350 degrees F and position a rack in the center of the oven. 8. Cut out or shape your cookies and place on baking sheet 2 inches apart to allow for spreading. 9. Combine almond milk and sugar and brush on cookies. 10. Bake on the center rack for 10-12 minutes or very slightly golden brown. 11. Remove from oven and let rest on pan for a few minutes, then transfer to a cooling rack to cool completely.
