O'Neill Affinity by Sarah Waters Books Unbound podcast https://www.booksunboundpodcast.com/ Pumpkin pie recipe Base: 250g plain flour 125g salted butter 1tbsp caster sugar 1 egg 2tbsp water Method: Use your fingers to bring the flour and butter together, then stir in the caster sugar, before adding the beaten egg and water and bring together into a dough. Bake on its own in a pie dish on 160 for twenty minutes. Filling: 1 can tinned pumpkin 1 can condensed milk 2 tsp cinnamon 1/2 tsp ground cloves 1 tsp ginger 1 tsp nutmeg 2 eggs Method: Whisk the pumpkin and condensed milk together. Add the spices to taste, then when you're happy with the flavour whisk in the eggs. Add to the semi-cooked pastry, then put back in the oven for 10 mins at 200, then a further 30 mins at 160. Leave to cool. Serve with whipped cream and chopped roasted hazelnuts. ---- WHO I AM Hello, I'm Jen Campbell.
