They’re perfectly sweet and have hints of fresh tangerines juice and zest in every bite. INGREDIENTS 40g (2 tbsp) tangerine peel, chopped 60ml (1/4 cup) tangerine juice 260g (1 1/2 cups) flour 100g (7 tbsp) softened butter 90g (2/3 cup) sugar 1 egg yolk 5ml (1 tsp) vanilla extract 8g (1 1/2 tsp) baking powder Salt to taste For coating: Granulated sugar Powdered sugar METHOD In a bowl combine softened butter with sugar. Mix well until smooth. Stir in tangerine peel, add tangerine juice and mix to combine. Stir in egg yolk, vanilla extract and a pinch of salt. Add flour and baking powder and mix everything with your hand until you receive an elastic dough. Chill in the fridge for 15 minutes. Form the dough into a log shape and divide it into small 20g balls. Coat each ball in granulated sugar and then in icing sugar. Arrange onto a baking tray lined with parchment paper and bake in the preheated to 170°C/350°F oven for 10-12 minutes.
