Thandai: Thandai is a centrepiece of Holi Celebration. This drink cools off in summer. It is packed with nuts, saffron, poppy seeds and other spices. Ingredients to make thandai masala: 1. Almonds. Half cup 2. Cashew nuts. Half cup 3. Pistachios. Half cup 4. Fennel seeds (sauf). Quarter cup 5. Melon seeds (magas). Quarter cup 6. Khas-khas (poppy seeds) quarter cup 7. Dried rose petals. Quarter cup 8. Generous pinch of saffron (kesar) (alternatively you can use quarter Tspoon turmeric powder) 9. Black pepper corns (kali mirch) 0.75 tablespoon 10. Green cardamoms (Elaichi) 20-25 11. Cinnamon. 2 small pieces 12. Nutmeg (jaifal). Small piece 13. Rose essence. 3-4 drops 14. Kevda water. Quarter Tspoon 15. Sugar (as per taste). Half cup For thandai drink: To make 1 glass: 1. Thandai masala powder (which we made. 2 tablespoon 2. Milk. 250 ml 3. Sugar (if needed more) 4. Ice cubes Method: 1. Mix all ingredients to make thandai masala in a dish except sugar, rose essence and Kevda water. 2. Mix well and keep in fridge for half an hour. 3. After half an hour transfer to grinder jar and add sugar, rose essence and Kevda water(screw pine water) 4. Grind the content gradually so that jar and content doesn’t get hot. If it gets hot, oil of nuts would be released and taste of thandai will be ruined. 5. Grind to coarse powder or else to smooth powder as you like. 6. Thandai masala is ready. 7. If you are making Thandai Drink for 2 persons, in a pot take 2+2 tablespoon Thandai masala and add 500 ml full fat milk . Add some ice cubes and mix with blender. 8. Garnish with sliced almonds and pistachios and rose petals. 9. Enjoy your Holi with Thandai drink and gujiya, dahi vada, chaat and Chatpata snacks. #love #food #foodie #holi #india
