Striking mountains, spectacular nature and - delicious food! Italy's northern mountain region - a vacation destination for connoisseurs. In South Tyrol, northern and southern Europe meet, Alpine freshness meets Italian sunshine. The best of both worlds also come together when it comes to food. Anyone on vacation here will find not only well-known classics such as dumplings, speck, Schüttelbrot and Schlutzkrapfen, but also unusual creations. South Tyrolean cuisine has long since ceased to be an insider tip among gourmets and has retained its original charm. This is due to the fact that in many, often remote valleys in South Tyrol, great importance is still attached to tradition and there is a very strong awareness of the value of regional products. On mountain farms, recipes that are sometimes centuries old are passed down from generation to generation. Hiking and enjoying delicious food: during “Törggelen” in the fall, wine taverns in northern Italy serve young wine and a hearty snack or simple dishes from the farmhouse kitchen. This is also the case at the Johannserhof farm in the Eisack Valley, where farmer Michaela Rott bakes doughnuts just like in the days of our great-grandmothers. Hansi Baumgartner is a “cheese affineur”, refining cheese that he buys from various farms in South Tyrol to create new types of cheese. His treasures mature in an old bunker in the forest. Top chef Norbert Niederkofler has subjected his Michelin-starred cuisine to strict rules. All the ingredients for his food must come from the immediate vicinity - and should not produce any waste. He finds out what is currently growing from vegetable farmers. He and his team then design the menu and store or process the food themselves. Florian Brigl's winery is located at Kornell Castle near Bolzano. Winegrowing is a tradition on the steep slopes of South Tyrol. A little further north, Floragunde Ralser serves one of South Tyrol's most traditional dishes at an altitude of over 2,000 meters: dumplings are served in all possible variations at the rustic Vallmingalm near Sterzing. Made with a lot of feeling - and a good portion of South Tyrolean serenity.
